I'm Red Thalhammer, founder and Creative Director of Antidote Chocolate. The name is a thesis. Cacao — real cacao, at full strength — is one of the most potent mood-supporting, stress-reducing foods on earth. It contains magnesium, iron, theobromine, anandamide, and more antioxidants than almost any other food. My mission since 2009 has been simple: make a chocolate that actually delivers those benefits. Not as a marketing claim. As a fact of how it's made. An antidote to fatigue, anxiety, low mood, and the dull weight of a difficult day.

It started with a text message in the midst of a recession in NYC. I wrote to a friend: "Sorry I was poisonous today." He wrote back: "No worries — I'll make an antidote for you." Something about that word stopped me. What if there really was an antidote to all the emotional challenges people face? I went to sleep with the question. The next morning I woke up with the answer: chocolate. Real chocolate, at full strength, could be exactly that. Obsessed by this idea, I started to make it happen.

WHY MOST CHOCOLATE FAILS YOU

Most chocolate is engineered to mask. High sugar, aggressive processing, and anonymous commodity cacao cover over bitterness and low-quality sourcing. The result tastes fine. But it doesn't nourish — because the processing that makes it palatable destroys the compounds that make cacao powerful. You end up with sugar and fat in a brown wrapper. That's not what we make.

HOW WE SOURCE AND MAKE IT

Antidote is built on single-origin Nacional Complex cacao — a rare, fine-flavor variety from the south and west of Ecuador, one of the most distinctive cacao origins in the world. We work direct-trade with farms and cooperatives, pay well above market rate, and maintain full control from tree to bar. Our cacao is pesticide-free, traceable, and chosen for both flavor and cleanliness. Antidote bars are always lead-free and test low in cadmium — exceeding EU safety standards.

We slow-roast to preserve antioxidants. We never use essential oils or artificial flavoring. We work with local artisans in Ecuador to custom-prepare our fruits and botanicals — no chemicals, no added sugar — so every flavor tastes alive and real. The sugar we use is unrefined cane sugar, chosen specifically for each bar to let the cacao shine. Our principle: function follows flavor.

Where there is high flavor, there is high nutrition. That's our compass.

THE FLAVORS

Our chocolate in full potency is not bitter — it is complex, layered, and deeply satisfying. That's the foundation every Antidote bar is built on. From there, we create flavor combinations that didn't exist in chocolate before. Sesame + Seaweed. Lemon + Licorice. Anise + Tomato. Lavender + Red Salt. Mango + Juniper. Each bar is named after a figure from mythology or a modern muse — Greek goddesses for the dark bars, Aztec gods for the raw 100% bars, playful characters for the milk bars — because cacao has always been food of the gods, and every flavor tells a story.

These are not trend-chasing combinations. Antidote has been making them since 2010. The industry has been catching up ever since. The Sesame + Seaweed Milk bar won a Silver medal at the Academy of Chocolate (UK), recognized for outstanding flavor.

THE ORIGIN

My relationship with chocolate began at my parents' restaurant in Austria — love was served through food, through Sachertorte made with less sugar, ingredients from the garden, wellness as a way of life rather than a trend. In 2009 I left a 25-year career as an Art Director and Brand Designer in New York — having worked with Dove, Starbucks, Pepsi, and Procter & Gamble — to pursue this full time. Nine months of kitchen experiments followed. I settled on Nacional Complex beans for their floral depth, packed my bags for Ecuador, found the right partners, and launched the first batch on July 25, 2010.

The small-batch spirit that started it is still in every bar we make.
